Server build: CPU requirement?

Hi all,
I am planning to install up to eight 4MP outdoor cameras, with which I want to do motion detection and use all the AI plugins that I will be able to use (not tried much yet). I need to build a server.
Would a 12 core "gaming" CPU (ryzen 9) be appropriate or is it an overkill? Maybe an cheaper ryzen 7 with 8 cores is good enough? Their price difference is about 200€.
Are the gaming oriented CPUs optimized for video encoding/decoding a good choice or I should look into more server side CPUs like the threadripper or the xeon series? Are the only important characteristics for ZM the number of cores, cache and frequency?
