Just wondering if certain types or models or brands of cameras are better for object recognition. Specifically wanting to recognize cars, license plates and people. Looking for Christmas wish list ideas! :)

It is indeed hard to give a general answer, because "object recognition" implementations/goals vary widely.

To recognize license plates reliably, you need excellent camera placement. Cams used for this typically have a good varifocal (variable focal length) lens, WDR and resolution that fits the application. Varifocal lenses are used so you can set the focal length to zoom into the area where license plates usually track. You'll also need an adequate frame rate if you want to snag moving plates.

Cams for other object recognition applications (facial, people, arbitrary items) is a different story, since camera specifications/requirements are usually clearly called out in the recognition software's specs.
