UDP with a reorder_queue_size=1000 setting in options... might work.

TCP ensures the packets get there, but they need to get there in time... so really UDP is better, but you need to tell ffmpeg to buffer them.

Solved all my Zoneminder problems!!

Ditched Zoneminder and went with a Reolink NVR 4 cam system for ~300 USD. I have 2TB of space, an awesome app for my iPhone and don't have to deal with all the problems Zoneminder has with CentOS 8!!

You have the right word for it! Try searching the forum with the phrases "FFMPEG tearing" "FFMPEG smearing" -- this does come up from time to time, and should be fixable.
